We all know how Singaporeans love crabs - from the Singaporean chilli crab, to black pepper, white pepper, salted egg, butter, crab beehoon, crab tang hoon; the list goes on.
This dish I tried at a tiny coffee shop in Geylang is not as popular as the ones I've mentioned above. Yet, it is something the Teochews are very proud of.
The dish is called cold crab.
At Happy Crab, the cold crab is slightly grilled and crushed with black pepper sauce. It is then served with three different sauces, namely soya sauce with spicy wasabi, sambal and mayonnaise.
The owner was formerly a crab farmer, so he knows his crabs well. He inspects his crabs carefully before buying from his supplier.
You're assured that every crab here is packed with meat and loads of roe.
As you look inside the crab, it is packed with sweet, succulent meat and savoury roe!
All it needs is a bowl of steaming rice and voila! The dish is complete.
Which sauce do I dip the crab meat and roe in? For me, I mix-and-match them. I simply let the flavours play in my mouth!
